Oolong tea offers the perfect balance between the freshness of green tea and the nuanced complexity of black tea. Production of Oolong tea is a labor intense process carried out by true artisan tea makers whose skill determines the aroma, taste and color of Oolong tea. The manufacture of Oolong begins directly after picking by allowing the leaves to be wilted in the sun for a short period of time. The leaves are then placed into baskets and shaken, which bruises the leaves. The moisture in the leaves is now exposed to the air, which begins the process of oxidation. The leaves are then pan fired which stops the fermentation and then fired again depending on the tea-crafters technique.
